Healthy Energy balls
Recipe for approx. 20 pieces
120g cashew nuts
120g whole almonds
120g soft apricots (diced small)
120g soft jumbo dates (pitted, diced small)
2 tbsp apricot jam
1/2 teaspoon cinnamon
1 tsp ground cardamom
2 tbsp sesame seeds
40 g almond flakes
• Fry the cashew nuts and almonds in a pan without any oil and leave to cool.
• Next, chop the cashew nuts and almonds with a food processor or electric chopper. Try not to chop the pieces too finely.
• Place the nut mixture, along with the remaining ingredients (except the almond flakes) into a food processor and stir with a flat mixer for 2-3 minutes until it has a creamy texture.
• Shape approximately 20 balls from the mixture with your hands. Roll the balls in the almond flakes until covered.
Tip: If you like, cover the energy balls with dark chocolate before allowing them to cool.
